Quick and easy nut-free date muesli bars

One of the things I wanted to pack in my Hospital Bag was tasty, filling, and healthy snacks. These date muesli bars have been a wonderful addition to our weekly food prep to increase the amount of dates I was eating without adding a load of chocolate to my diet too!

Quick and easy nut-free date muesli bars

One of the things I wanted to add to my Hospital Bag was healthy snacks that I could make at home so I knew what I was eating. These are nut-free and truly delicious!

Ingredients

  • 150g rolled oats

  • 40g desiccated coconut, plus extra to sprinkle on top

  • 50g pumpkin seeds 

  • 50g sunflower seeds 

  • 90g maple syrup

  • 50g coconut oil, melted 

  • 16 dates, deseeded 

Intructions

  1. Preheat oven to 170ºC and add a sheet of greaseproof paper to a 9x9 inch square tray. If you have a reusable sheet, use this instead!

  2. Place all ingredients in food processor and pulse until well combined.

  3. Press the sticky mixture into your tray. Sprinkle the top with 1 tbsp of desiccated coconut and bake for 20-25 minutes.

  4. Remove from oven and while still warm, cut into 12 bars.

  5. Allow to cool completely before eating. When they have cooled, enjoy!

Notes

I made this as a healthy Hospital Bag snack. One of my friends has a nut allergy and I wanted to make sure that whatever I was bringing to the Hospital was safe for anyone with nut allergies.
