
Goat's cheese Shakshouka
Shakshuka is a North African and Middle Eastern meal with poached eggs in a spicy delicious tomato sauce. Quick, easy, and incredibly delicious. Topped with goats cheese makes this dish jump from delicious to incredible!

Ingredients
Title
- 2 tablespoons of olive oil
1 medium onion, diced
1 red bell pepper, seeded and diced
4 garlic cloves, finely chopped
2 tsp paprika
1 tsp cumin
- ¼ tsp chili powder
1 can whole peeled tomatoes
4 large eggs
salt and pepper, to taste
1 small bunch fresh cilantro, chopped
1 small bunch fresh parsley, chopped
Intructions
- Heat olive oil in a large pan on medium heat. Add the onion and cook for 5 minutes or until the onion becomes translucent. Add the bell pepper and cook for a further 4 minutes.
- Add the garlic and spices and cook for 1 minute until fragrant.
- Add your tin of tomatoes to the pan and break down the tomatoes using a large spoon/ spatula. Season with salt and pepper and bring the sauce to a simmer.
- Use your spatula to make small wells in the sauce for the eggs. (If the sauce is still liquidy it might run into the space you have made but try your best!) Crack the eggs into the wells you have made. Cover the pan with a lid and leave to cook for 8-11 minutes depending on how you like your eggs cooked.
- Garnish with goat's cheese, chopped coriander, and parsley before serving.
Notes
Cover the eggs with a plate/lid to fully cook the eggs — wiggly egg yolks kinda freak me out. Bad enough that we are eating another animal's period!
