Mini Tuna Sushi Air Fryer bites

I came across Lauren's TikTok video showing how she makes her Mini Crispy Spicy Tuna Sushi Tacos and I was so excited to try them. I didn't have a lot of the things she was using so I've simplified it so that you can make it making things you already have... Although if you haven't tried the Kewpie mayonnaise, I am now a firm convert. I normally eat vegan so this is definitely not a vegan recipe... But as a fishy Friday lunch, it is now my favourite.

Mini Tuna sushi air fryer bites

This just might be my new all-time favourite lunch. I loved the textures, flavours, and crispiness of everything.

Ingredients

  • 2 sheets sushi nori sheets
  • 145g tin of tuna
  • 1 tbsp. Sriracha
  • 2 tbsp Mayonaise (I used a Lidl vegan mayo)

  • 1 cup Sushi Rice

  • Sliced Avocado, for garnishing

Intructions

  1. To start, I washed my sushi rice. I then cooked it in my rice cooker with the appropriate amount of water until it sang me a beautiful song to tell me it was ready. I normally cook this in the morning so it will be ready for me when I want to make lunch.

  2. It's now lunch time for me. 

  3. Cut nori sheets in 4 so each nori sheet is now a quarter of the size. Add one tbsp of rice and press down into the nori sheet. If it is sticking to your fingers, dip your fingers in some water or white vinegar and keep going until you have pressed rice onto all 8 sheets (nori sheets - 4 each)

  4. Cook the nori rice mix in the air fryer for 10 minutes at 180 degrees celsius. I like mine extra cruncky so feel free to reduce the time or temperature if you don't like them crispy.

  5. While my rice was cooking, I mixed the sriracha, mayo, tuna, and a dash of soy sauce together in a bowl. 

  6. When the air fryer is finished, take out your crispy nori rolls. Top each with some tuna, avocado and a sprinkle of seasme seeds. I also added a drizzle of sriracha to each but if you don't like spice, maybe avoid this or go easy on your drizzle.
