Jalapeno and cheddar swirls

 

These are my favourite thing to make when there are no fruit and veggies in the house and we are hungry! I always have some cheese in the fridge and we love to have a jar of jalapenos on the go. I also love to keep a roll of puff pastry in the freezer so that I have food in the house and won't be tempted to order a take-away. We don't have a huge number of food options available in our area anyway so these always hit the spot when it's too early in the day for the chippers to even be open!

Jalapeno and cheddar swirls

These are such a delicious and impressive treat to whip together at the drop of a hat! I always have a roll of puff pastry in the freezer and these always go down a treat when the fridge is empty

Ingredients

  • 1 roll of premade puff pastry
  • 2-3 tbsps of Jalapenos (fresh or from a jar!), diced

  • 115g cheddar cheese, grated

  • 2 tbsps mayonnaise 

Intructions

  1. Heat oven to 180°C Fan over. Line a baking sheet with parchment paper or a reusable silicone mat.
  2. Unfold the pastry sheet on a lightly floured surface. Set to one side.
  3. Spread the mayonnaise evenly over the puff pastry.
  4. Sprinkle the chopped jalapenos and cheddar cheese evenly over the puff pastry.

  5. Starting from the longer side, roll the puff pastry up tightly into a log shape.

  6. Cut the jalapeno cheddar filled puff pastry into 12 equal pieces. Lay these evenly in the baking sheet; I normally do 4 rows of 3 swirls. 

  7. Bake for 15-20 minutes, or until golden brown. 
  8. Serve and enjoy!

Notes

These are simply divine! I would recommend 2; one for each hand!
