Blackberry and Apple jam

One of my favourite rituals to welcome Autumn is foraging for blackberries and apples to make a delicious jam. I am so excited to create beautiful memories with our little one, and as this has been my way to welcome Autumn for so many years, I wanted to include them in blackberry picking this year - cue baby carrier! I grabbed an empty blueberry tub and the dog's lead and we were off!

A lot of the roads around our house normally are overflowing with berries, but this year the brambles had been cut back a lot to make the road safer for driving, so we had to venture further into the countryside to gather our goodies.

Blackberry and apple jam

One of my favourite rituals to welcome Autumn is foraging for blackberries and apples to make a delicious jam.

Ingredients

  • 500g cooking apples

  • 500g blackerries

  • 1kg granulated sugar

  • Juice of 1 lemon

Intructions

  1. Go foraging for blackberries!

  2. Peel and chop your cooking apples. Wash your blackberries.

  3. Add apple chunks, blackberries, suagr and lemon juice to a large pot.

  4. Stir the mixture over a med-low heat until the sugar dissolves. 

  5. Add a plate to the freezer for testing your jam. 

  6. Slowly bring the mixture to a boil and simmer for 30-50 minutes depending on the pot you are using. The jam will change from individual pieces of fruit to a combined purple magic mixture. 

  7. Take your plate out of the freezer when you feel your jam looks nice and glossy. Add a tsp of your jam mixture to the plate. Leave it for 30 seconds. Then run your finger through the tsp. If it wrinkles, it is ready. 

  8. Sterilise your jars by pouring boiling water into the jar to the top. 

  9. Pour out all the water from the jars and ladle your jam into each jar. Fill the jar to the neck and place your wax disc on the top to seal. Using oven gloves, put your lid back on and seal as tightly as you can. The pop at the top of the lid will be sucked back inside as the jam cools.
