Irish Soda Bread

 

There is nothing quite like a fresh slice of Soda Bread with a dollop of Irish butter, alongside a bowl of steaming hot soup, particularly when it is frosty outside. 

I always wanted to make fresh bread at home but always thought it would take too long. This is the exception to the rule! It is definitely the easiest bread to make quickly, without any baking skills, and comes together so quickly. 

The hardest part is not eating it all as soon as it's out of the oven!!

No knead soda bread - yes please! This is a delicious bread to have in your kitchen. I made this loaf ahead of Storm Éowyn and it was exactly what we needed when we were feeling a bit nervous with the hailing gale outside.

  • 200g of wholegrain flour

  • 275g strong white flour

  • 350ml buttermilk

  • 1 generous tsp of bicarbonate of soda

  • 1 large free-range egg

  • 1 tsp honey

  • A pinch of salt

  • 2lb loaf tin

Intructions

  1. Preheat the oven to 190°C Fan. Grease and flour your 2lb loaf tin. 

  2. Combine your wholegrain flour, strong white flour, bicarbonate of soda, and salt in a bowl. In a measuring jug, combine the buttermilk, egg and honey. Whisk them all together.

  3. Make a well in the centre of the dry ingredients, and then pour in the wet mixture to the dry mixture. Gently combine your wet and dry ixture until a sticky dough forms. You don't need to overmix here at all so be as lazy as you want! Shape into a rough oval and place in the greased loaf tin.

  4. Sprinkle a little flour on the top. Then into the oven for 30–35 minutes. Take then bread out of the loaf tin and leave to cool on a wire rack. The bread will sound hollow when tapped on the bottom when it is fully cooked. Allow to cool before enjoying.

Notes

Don't rush through the greasing part! This is always the part I speed through and then fight with the bread to get it out of the tin later! 

If your bread is refusing to budge from the tin after the 35 minutes, run a knife around the edge and shake it to pop it out!
