No bake coconut balls

These are such a delicious and easy to make snack to have on the go.

Ingredients

  • 150g cashews

  • 50g desiccated coconut

  • 1 tsp vanilla essence

  • 2 tbsp maple syrup

  • 2 tbsp coconut oil

Intructions

  1. Heat oven to 180°C. Line a baking sheet with parchment paper or a reusable silicone mat and roast the cashews for 6 minutes until golden brown.

  2. When the cashews have cooled, add them to the food processor and blend on high until you get a cashew flour. I like the chunky and smooth texture so it is up to you how fine your cashew flour is! 

  3. Heat the coconut oil, vanilla essence, and maple syrup over low heat in a saucepan or small frying pan until melted and combined. This usually takes 1-2 minutes.

  4. Add in the vanilla essence and dessiccated coconut and continue blending until you get a smooth consistency. 

  5. Roll the mixture into 12 small cashew balls. Roll in some more desiccated coconut to finish. 

  6. Store in an airtight container and enjoy!
