Cacio e pepe

I challenge you to NOT eat absolutely every bite! I know I fail every time.

Ingredients

Title

  • 200g linguine or bucatini

  • 1 tbsp olive oil or butter

  • 35g pecorino cheese, finely grated

  • 15g parmesan cheese, finely grated

  • 1 tsp of freshly ground black pepper

  • salt (for salting the pasta water)

Intructions

  1. Cook the pasta in salted boiling water for 2 minutes less than specified on the packaging. 

  2. As the pasta is cooking, add the oil or butter to a pan. Once it it hot, add the fresh black pepper until it is fragrant.

  3. Drain the pasta with a colander in a large bowl to save the pasta water. 

  4. Add a tablespoon of pasta water at a time into the pan with the pepper. Add small handfuls of the grated cheese at the same time and mix together until a nice sauce comes together. 

  5. Add your pasta to the sauce and mix to coat everything evenly. 

  6. Serve with an extra crack of fresh black pepper. Now try not to eat the whole lot!
